Dairy Free Garlic Basil Pesto

Pesto is one of those foods that I find you can never have too much of.  It is so versatile-used to spice up anything from pasta to chicken dishes. There are many ways to make pesto, but I am sharing my favorite simple recipe that also happens to be dairy free! Most recipes call for Parmesan cheese, but it really isn’t necessary to create the bold and delicious flavor of basil pesto.

For this recipe, I chose to use walnuts instead of pine nuts which tend to be quite a bit more expensive. Alternatively, you can substitute almonds, pistachios, macadamia nuts or even sunflower seeds in place of walnuts for your pesto.

Not only is it dairy-free, it is also naturally gluten -free and vegan. If you did not grow your own basil this year, don’t worry, using fresh basil from the store works just as well.

Dairy Free Garlic Basil Pesto

Servings 1 cup

Ingredients

  • 2 cups basil loosely packed
  • 4 cloves peeled garlic
  • 1/2 cup olive oil
  • 1/2 cup walnuts
  • 1/2 tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Simply add all ingredients into a blender or food processor and blend until smooth! Add additional olive oil if mixture is too thick. 

  2. Refrigerate for up to a week or freeze for up to 4 months. Enjoy!

Pesto is a versatile sauce and can be used in many different dishes including:

  • Pesto Pasta Salad
  • Pesto Flatbread Pizza
  • Pesto Chicken Pasta
  • Baked Pesto Chicken
  • Zucchini Noodles with Pesto

    Not only was this recipe delicious! But my basil this year has grown far faster than I have been able to use it. Making this and freezing it is a fantastic idea!

    I didn’t plant any basil this year but thankfully, I can get a ton from the CSA we belong to. Can’t wait to make this on Wednesday!

    Thank you for this recipe! I’ve been feeding the kids I look after a lot of pesto pasta, but since I’m vegan, I always had to cook something else for myself. Going to make this next week. Bet they won’t even notice the difference 🙃
