Healthy Chocolate Chip Cookies

A  Delicious Gluten and Dairy-Free Cookie

Chocolate chip cookies are my ultimate weakness. I love anything containing chocolate chips and have been known to sneak a handful (or two!) straight from the bag every now and then. Unfortunately most of the recipes I have used in the past are loaded with processed sugar, white flour, and overall unhealthy ingredients. Eating cookies like that on a regular basis is just not an option for me. I created this Healthy Chocolate Chip Cookie recipe so I could have a guilt free, healthy treat whenever I want one.

These cookies are a perfect healthy snack that I feel good about giving to my family. They are packed with healthy fats from coconut oil and walnuts plus the peanut butter gives them an extra boost of protein.  They are also gluten and dairy free! I use Enjoy Life chocolate chips, which are dairy-free. I love that they are made with simple ingredients that I always have on hand in my pantry. The great thing about this recipe is that it makes 25-30 cookies depending on how big you make them. I usually put half of them in the freezer so I can pull them out for a quick afternoon snack. My husband and kids love them so they don’t last long around our house!

Healthy Chocolate Chip Cookies

  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup natural peanut butter
  • 1 1/2 cups oat flour I use old fashioned oats and grind them up in my blender
  • 1/2 cup ground pecans or walnuts I also use my blender to do this
  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups chocolate chips

  1. Blend the maple syrup and coconut oil together in a stand mixer or using a hand blender for about 1 minute. Beat in the eggs, vanilla, and peanut butter.

  2. Add the oat flour, almond flour, ground walnuts, baking soda, and salt. Mix until well incorporated. Stir in the chocolate chips.

  3. Bake at 350 degrees for 13 minutes. Leave the cookies on the pan for about 5 minutes before transferring to a cooling rack

  4. Store in an airtight container at room temperature and enjoy!
