Looking for a quick and healthy alternative to store-bought snacks? These homemade frozen yogurt popsicle’s are delicious, healthy and inexpensive! I try to provide my kids with filling, nutritious snacks that also taste good. These were definitely a hit even with my picky eater. With only a handful of real ingredients, you can feel good about giving this to your kids for a healthy snack this summer. You can make a variety of flavors using different fruit combinations. I chose to use blueberries, but you could also use strawberries, raspberries or even peaches.
For this recipe, you will need approximately 3 cups of plain yogurt. You can use store-bought yogurt or make your own in the Instant Pot. If you have not given Instant Pot Yogurt a try, you are really missing out! I was intimidated at first, but it was actually extremely easy to do at home and you really cant beat the fact that it costs a fraction of what store-bought yogurt costs.
The Instant Pot is so popular right now because of the numerous time and cost saving benefits it offers. I use mine almost every day for things like yogurt, bone broth, soup and making baby food. Plus, there are so many accessories to buy along with it that allow you to steam vegetables, make egg bites and even prepare dessert like cheesecake.
You will need some type of popsicle mold to make these yogurt popsicles. Through trial and error, I can highly recommend these Silicone Posicle Molds. I’ve tried several different types of disposable and reusable molds, and these are definitely a favorite. They are easy to clean and mess-free which makes them perfect for little ones. You can use any popsicle mold with this recipe, but I have found that these hassle-free molds work the when making homemade frozen yogurt popsicles.
Homemade Frozen Blueberry Yogurt Popsicles
- 2 cups plain yogurt
- 1 cup fresh or thawed blueberries
- 3 tbsp honey
- 2 tbsp water
- 1 tsp lemon juice
If making your own yogurt, follow our recipe for Instant Pot Yogurt listed above. If using store-bought, move onto the next step.
Add the blueberries, honey, water and lemon juice in a saucepan. Stir frequently and let simmer for 15 minutes or until sauce has thickened.
Transfer mixture to a blender and blend until ingredients are well combined.
In a bowl, stir together the plain yogurt and the blueberry puree.
Pour mixture into popsicle molds, one at a time, until approximatley 2/3 full. Place a lid on each mold as they are filled and place in the freezer in an upright position.
Allow to freeze overnight. Yogurt popsicles can be stored in the freezer for up to two months.
