Turkey and Rice Soup is the perfect way to use leftover turkey from Thanksgiving! This recipe requires minimal hands-on time and uses just a few simple ingredients. Utilizing the Instant Pot for this soup is uncomplicated and straightforward. I like to make a big batch of this soup and freeze half of it for future effortless dinners and quick lunches.
The great thing about making homemade soup is that you know what ingredients it contains! You can add any veggies you want to this Turkey and Rice Soup. Carrots and celery are what I use in the fall and winter. I like to add in fresh veggies like green beans, cabbage and tomatoes during the summer months when I have access to them.
Instant Pot Turkey and Rice Soup
- 1 onion
- 3 carrots
- 2 celery stalks
- 2 garlic cloves
- 3 cups shredded turkey
- 1 cup brown rice
- 8 cups bone or chicken broth
- salt and pepper to taste
Chop onion, carrots, celery, and garlic. Place in Instant Pot
Add shredded turkey and brown rice
Pour bone broth over the other ingredients. Season to taste with salt and pepper.
Secure the lid on the Instant Pot. Using the manual setting, set the cook time for 20 minutes. Allow an additional 10 minutes after the cook time is complete for the pressure to naturally release. After 10 minutes turn the valve to release the remaining pressure.
