Unstuffed Cabbage Roll with Quinoa


  • 1 lb ground beef
  • 1 cup chopped onion
  • 2 cloves minced garlic
  • 1 cup quinoa
  • 2 1/2 cups chicken bone broth
  • 6 oz tomato paste
  • 2 cups chopped cabbage
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 bunch fresh parsley


  1. Brown hamburger in a large saucepan, deep skillet, or dutch oven. Drain and set aside.

  2. Heat olive oil in the saucepan and saute onions until tender. Add in garlic and cook for 2 more minutes.

  3. Add in chopped cabbage, hamburger, quinoa, tomato paste, bone broth, salt, and pepper. Stir to combine.

  4. Bring to a boil. Then turn down the heat to low, cover, and simmer until quinoa is cooked and liquid is absorbed, approximately 20 minutes. Fluff with a fork and garnish with fresh parsley before serving.
