Healthy Chocolate Chip Cookies


  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup natural peanut butter
  • 1 1/2 cups oat flour I use old fashioned oats and grind them up in my blender
  • 1/2 cup ground pecans or walnuts I also use my blender to do this
  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups chocolate chips


  1. Blend the maple syrup and coconut oil together in a stand mixer or using a hand blender for about 1 minute. Beat in the eggs, vanilla, and peanut butter.

  2. Add the oat flour, almond flour, ground walnuts, baking soda, and salt. Mix until well incorporated. Stir in the chocolate chips.

  3. Bake at 350 degrees for 13 minutes. Leave the cookies on the pan for about 5 minutes before transferring to a cooling rack

  4. Store in an airtight container at room temperature and enjoy!
