Pumpkin Einkorn Muffins

Makes 24 muffins

  • 3 1/2 cups einkorn flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1 tsp salt
  • 1/3 cup raw honey
  • 3/4 cup coconut sugar
  • 1 cup coconut oil melted
  • 2/3 cup coconut milk
  • 2 cups pumpkin puree I used my homemade version but canned pumpkin puree would work just as well
  • 4 eggs


  1. Preheat the oven to 350 degrees and grease a muffin tin with coconut oil.

  2. Mix together coconut sugar, honey,eggs, coconut oil, coconut milk, and pumpkin puree in a stand mixer or using a hand mixer.

  3. Sift together einkorn flour, baking soda, salt, and spices. Slow stir the dry ingredients in with the wet ingredients. Mix until just combined.

  4. Fill the prepared muffin tins 2/3 full with batter.

  5. Bake for 30 minutes or until a toothpick in the center of the muffins comes out clean. Allow to cool for 5-10 minutes before removing from muffin tin.
